We started off today with loads of pancakes in the Just-Eat.ie office and we said we’d share the recipe with you for this evening! Om nom!

So here’s what you do to make the ultimate pancake…

Ingredients:

• 100g plain flour
• Pinch of salt
• 1 egg
• 300 ml milk
• 1 tablespoon melted butter or sunflower oil

Making the Pancake:

Sift the flour and salt into a mixing bowl and make a well in the centre. Crack the egg into the well; add the melted butter or oil and half the milk. Gradually draw the flour into the liquid by stirring all the time with a wooden spoon until all the flour has been incorporated and then beat well to make a smooth batter. Stir in the remaining milk. Alternatively, beat all the ingredients together for 1 minute in a blender or food processor. Leave to stand for about 30 minutes, stir again before using.

To make the pancakes, heat a small heavy-based frying until very hot and then turn the heat down to medium. Lightly grease with oil and then ladle in enough batter to coat the base of the pan thinly (about 2 tablsp.), tilting the pan so the mixture spreads evenly. Cook over a moderate heat for 1-2 minutes or until the batter looks dry on the top and begins to brown at the edges. Flip the pancake over with a palette knife or fish slice and cook the second side.

Serving:

• Butter
• Castor Sugar
• Lemon Juice
• Nutella

Pop them onto a plate, butter, sprinkle some sugar and squeeze a bit of lemon.

So we were absolutely inundated with entries for the Valentine’s Day Competition!

First of all, let’s say awwwwwwwww – the stories were lovely!! And some were absolutely hilarious!

We said we’d post the winning story below:

“I met my husband Marky Drew, 12 years ago this May,
I thought he was so funny, and handsome I must say,
We hit it off straight away, I knew that it would last,
He wasn’t like the other guys, I’d dated in the past,

Within 2 years we’d bought a house, and started parenthood
But the one thing that I realised, he hates the sight of blood,
So when it came to giving birth, he didn’t feel too well,
I was only in the labour ward, when on the ground he fell,

3 gorgeous kids complete our clan, we’ve had a lucky faith,
We don’t get out too often, but when we do its great,
Marky’s partypiece is break,dancing, he’s actually quite good,
He can even do the caterpillar move, after 15 pints of bud,

The years have seen so many things, both happiness and grief,
But the one this than remains the same, is our love beyond belief,
So come on just-eat give me the chance, to show how much I care,
And take him to the Ardilaun Hotel and spoil him while we’re there!”
